It is a very busy Friday afternoon lunch rush at the CSI Bistro located on the Magnificent Mile in downtown Chicago. The 120-seat restaurant with white marble table tops and sleek black metal chairs is completely full with guests at every table. Steve the host, who is a supervisor (paid an hourly rate), is trying to seat guests within the quoted time he has been giving as new parties walk into the restaurant. He noticed that there are three tables where the guests have finished their meal, left and the tables are dirty. After seating a party of two he stops by the wait station next to the kitchen looking for Mark the bus-boy. In a very professional manner Steve asks him to reset the dirty tables as quick as possible and then starts to walk back to the front door to greet new guests walking in. As he approaches the front Mark walks up behind him yelling “If you want the tables cleaned that bad than why don’t you do them yourself - can’t you see I’m busy!?” Steve quickly replies “Okay - thank you” and turns back to greet the guest who heard everything. Before Steve can even say “Welcome” to the new guest, the man says in a semi joking manner “Looks like you’re short staffed today - You sure you can handle two more people for lunch?” The supervisor handles the guests and plans to speak to Mark about his behavior once the busy rush ends.
